Thai Chicken

This is a meal that we have come to love in our home! It’s relatively simple to make and tastes awesome. This recipe is something that I compiled after reading various Thai chicken recipes, a lot of them are served with pasta but I love this served with stuffed potatoes or just plain garlic mashed potatoes.

In this recipe I used Epicure’s Thai seasoning but I’m sure you could get away without it, I had it in the cupboard and figured why not.




Thai Chicken

1 lb chicken breasts
Thai seasoning

1 red bell pepper, sliced
1 green bell pepper, sliced
½ cup green onions, sliced
2 cloves garlic, crushed
½ cup coconut milk
1 Tbsp red Thai curry paste
¼ cup soy sauce
¾ cup Thai Chili Sauce

Season the chicken breast and pan fry in a little oil until both sides are brown, cook until done or place in the oven to finish baking.

Meanwhile in the same pan, stir fry the peppers, onion, and garlic until tender crisp. Stir together the milk, curry paste, soy sauce, and chilli sauce. Add to the peppers and simmer for a few minutes. Top the chicken with a generous portion of the sauce and peppers before serving.
