Fried Chicken, Redneck style

As the post title indicates, it's time to get your redneck on, lol. This chicken is so simple to make and it's one of my favourites. But don't expect to see this served at a nice dinner.



Cracker Fried Chicken

3 chicken breasts, slice each breast in half horizontally and vertically
1-2 sleeves soda crackers

Crush one sleeve of soda crackers by putting them in a large Ziploc bag and go over it with your rolling pin. Place a small handful of crushed crackers on your work space, place one piece of chicken on the crackers and cover with more cracker crumbs. Now work the crackers into the chicken by rolling gently back and forth with the rolling pin. Flip it over in between making sure that you get a nice even coat of cracker crumbs, you'll notice that your chicken will get flattened by doing this. I try to roll mine to be about 1/4" thick.

Fry in about an inch of hot oil until golden brown. I like to serve this with rice and a tossed salad, my kids dip it in plum sauce and I've seen some serve it with a cheddar or cream sauce on top.
