Mexican Rice

This is one of our newly discovered favourite rice recipes! It smells so fragrant while cooking, my husband always knows we're having something Mexican if he walks in the door to this smell.  The recipe was found on All Recipes with great reviews!



Mexican Rice

1 cup long grain white rice (I use basmati)


1 tablespoon vegetable oil

1 1/2 cups chicken broth

1/2 onion, finely chopped

1/2 green bell pepper, finely chopped

1 fresh jalapeno pepper, chopped (I don't normally add this)

1 tomato, seeded and chopped

1 tbsp chicken bouillon

salt and pepper to taste

1/2 teaspoon ground cumin

1/2 cup chopped fresh cilantro

1 clove garlic, minced

Heat the oil in a medium saucepan. Add rice and stir fry for a few minutes until the rice turns white. Add remaining ingredients and bring to a boil. Simmer for 20 minutes. Take the pot off the burner and let it sit for a 5-10 minutes.
